Vanilla caviar is the seed-rich interior of the pod, supplied ready to use. It gives the visible black specks that signal real vanilla in a dessert, without the labour of splitting and scraping pods in the kitchen.
For pastry and dairy production it is the most time-efficient way to work with natural vanilla, and portioning is far more consistent than hand-scraping.
